Ethiopia is a naturally floral coffee that acquires fruitiness and complexity thanks to its distinctive drying method, which brings out notes of ripe blueberries and a touch of musk. We roast this Master Origin coffee separately. It receives a light and medium roast to keep the more delicate notes alive and allow them to stand out through the wilder and more potent aromas of this Ethiopian coffee. Master Origin Ethiopia is created from floral Arabicas and is defined by the characteristic blueberry notes derived from its natural drying process. In the Western Highlands of Ethiopia, farmers spread the harvested coffee cherries on raised beds for drying. For four weeks, their coffee is exposed to the sun while farmers carefully turn it by hand at regular intervals to ensure it dries evenly.
